Zucchini are making their appearance in local farmers markets in our area, and were one of the stars of the show in my CSA pick-up for this week. Broad Bean Falafel with Tatziki Style Dip

Made with fresh broad beans from my weekly CSA pick-up from Devon Acres Farm, this delicious Lebanese style falafel was the star of our Sunday supper. The beans give a surprising bright green centre to these lightly fried vegetarian fritters and serve as a delicious flavour base for the smoky cumin and spicy cayenne that give this dish a kick. Paired with Israeli tabouleh salad, Moroccan eggplant salad and whole grain pita, we enjoyed the exotic mysterious flavours of the Middle East without leaving the kitchen.
